Mi Tierra Chile Con Queso

A few years ago, Kev and I were traveling to South Padre Island, Tx, but at the last minute, had a layover in San Antonio for a couple days.  Not ones for sitting still, we quickly started to find out what was around us.  We visited The Alamo and walked up and down The Riverwalk, both entertaining in their individual ways.  Our next stop, was Mi Tierra Cafe, a place recommended by Kevin's brother.  It was such a vibrant and energetic place that you didn't know where or what to look at.  We ended up getting a table outside and just as I'm getting situated, Mr. Romance himself summons a mariachi band to come over and play me a love song!  Swoon!  Besides the wealth of entertainment, the food was phenomenal as well!  We probably looked like we were having our last meal, well not really, but I have to pound in how good it was!  I found this recipe and of course had to see if it did the restaurant any justice.  Even though I have high doubts that this is in fact their recipe, it was seriously delicious.  So while you are planning your next trip to San Antonio, make this dip in the meantime.  You won't be disappointed!  



Mi Tierra Chile Con Queso Dip

Ingredients 
1 cup sharp Cheddar cheese, shredded
1 cup Velveeta, cubed
1/2 cup heavy cream
1 jalapeƱo, seeded and minced
1/4 cup tomato, seeded and minced
1/4 cup onion, minced

Combine the cheese in a slow cooker until it starts to melt.  Add the cream and stir until smooth.  Add the remaining ingredients, mixing well.
