Monterey Chicken

I have seen this recipe, found here, pinned so many times on Pinterest that I had to try it.  Tired of seeing it over and over without making it, I decided to take it on!I mean how could you go wrong with chicken, BBQ, and cheese?  It was everything and more than I expected.  The chicken was super juicy and when all the flavors combined it was scrumptious!  It was too easy for you not to make instead of watching it continually show up on your Pinterest feed.  Play around with different BBQ sauces or cheeses for other flavor combination!  As always, enjoy!

Monterey Chicken

Ingredients
4 boneless, skinless chicken breasts
1/4 cup BBQ sauce
1/4 cup real bacon bits
1 cup Colby Jack cheese, shredded
1 (14 ounce) can Ro-Tel with Chilies, drained
Sliced Green Onion
Salt and Pepper

Preheat oven to 400 degrees.  Prepare a baking sheet with aluminum foil.

Season chicken with salt and pepper and grill until done (165 degrees).  We used our Foreman Grill for this and it worked great.  Place on baking sheet.  Top each breast with 1 Tablespoon BBQ sauce, 1/4 cup cheese, 1/4 cup Ro-Tel, green onions, and 1 Tablespoon bacon bits.    

Place in oven for about 5 minutes or until cheese is melted.
