Apple Carrot Juice

Today I bring you a very basic juice recipe. It is great if you are a newbie to juicing (which I am) and aren't quite sure what all to put in your juices yet. I am planning on getting into more intricate juices, but for now, this one is great. It tastes just like apple juice and you have the added benefit of 2 servings of carrots. You know how the saying "An apple a day.....". If you are a newbie like me, or want to do a cheap and easy juice, try it out. You can always add more to it the next time! Enjoy!  


Apple Carrot Juice

Ingredients 
2 Apples, cut into a few wedges
6 ounces baby carrots (2 servings)

Juice all your ingredients together. :)

Apple Spice Cake with Bourbon Glaze

I thought I better get this recipe posted since it is perfect for fall and well, fall isn't really happening this year I guess. Not that you can't eat it whenever of course. I just always think of apple and pumpkin recipes being perfect for fall weather. This recipe is very special to me because it was the very first thing I baked on my own many moons ago. I remember being so proud of myself because back then I thought it was so difficult. Well throughout the years my baking knowledge has increased and the tools (hello KitchenAid mixer) have improved greatly, but the taste of this cake has stayed the same. It is so deliciously moist with the perfect apple flavoring. The glaze makes it a little sweet, but not overpowering (below I've also included another version if you don't want to use bourbon in yours). It is too easy and tasty not to try! If you can, hurry up and make it before fall has completely left for the year! Enjoy! 



Apple Spice Cake with Bourbon Glaze

Ingredients

1 cup oil
3 eggs
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
3 cups chopped apples
2 cups sugar
3 cups flour
1/4 teaspoon salt
1 teaspoon nutmeg

Optional
1 cup chopped pecans

Bourbon Glaze
1/2 cup Bourbon
1/2 cup sugar


Preheat oven to 350 degrees. Grease and flour your bundt pan, set aside. 

Combine oil and sugar, beating well. Add eggs one at a time until combined. 

In a separate bowl combine flour, soda, salt, cinnamon, and nutmeg. Add the dry mix to the sugar mixture and add vanilla. Stir in pecans (if using) and apples. 

Pour into bundt pan, bake 1 hour 15 minutes. Once done, poke holes in the bottom before removing from the bundt pan and spoon over glaze, cool completely.


Bourbon Glaze

Place the bourbon and sugar in a small saucepan. Heat over low to medium-low heat until sugar is dissolved and the glaze is slightly thicker. Remove from heat and use on the cake. 







* Here is the original glaze I used before which is sweeter, but equally as good. It's perfect if you don't want to use the bourbon in your recipe! 

Glaze
1 cup sugar
1/2 cup buttermilk
4 Tablespoons butter
3 teaspoons vanilla
1/2 teaspoon baking soda

Combine all in saucepan, boil 4 minutes.

Apple Cinnamon Bread

Since the weather has taken a somewhat fall like turn this past week, which I just love, I decided to make this recipe which would be perfect for the cooler temperatures. Plus, I was excited to try out my oil mister for the first time (I absolutely love it btw). This bread was quite tasty and is perfect for fall. It's one of those breads that you can eat as a dessert or have for a quick breakfast, which my husband did for a few days. It is wonderful heated up and equally as good cold. I felt like my pan was a little larger than I would have preferred, but it in no way affected the taste of the bread. As fall heads your way, try this recipe out. It is very easy and packs great flavor into a simple loaf of bread. Enjoy! 


Apple Cinnamon Bread

Ingredients 

1/2 cup packed brown sugar
1 1/2 teaspoon ground cinnamon
2/3 cup sugar
1/2 cup butter, softened
2 eggs
2 teaspoons vanilla extract
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 cup milk
1 large or 2 small red apples, peeled and finely chopped

Preheat oven to 350 degrees. Grease and flour a bread pan.

Mix together brown sugar and cinnamon in a small bowl and set aside.
With a mixer, combine sugar and butter until smooth. Once smooth, add eggs and vanilla until combined.

Add the flour and baking powder, it will look dry, then you add the milk.
Pour half the batter into the prepared pan. Cover with half of the apples. Slightly pat apples into batter. 

Sprinkle with half of the brown sugar and cinnamon mixture.
Repeat with the remaining batter, apples, and brown sugar and cinnamon mixture.

Bake for about 50 minutes or until toothpick inserted in the middle of the loaf comes out clean.
